手摘みで収穫、空気圧プレスで圧搾後、低温のステンレスタンクで一晩寝かせる。ドゥミ・ミュイを使用し、天然酵母により主発酵、マロラクティック発酵を行う。12ヶ月澱とともに熟成。軽くろ過した後、翌年の収穫前に瓶詰め。エコセール認証済み。
