2.02haの年度石灰質土壌、樹齢30年、ギヨ・サンプル。100%除梗、発酵前に低温浸漬を4-5日ほど行い、発酵中は32℃を越えないようコントロールされる。パンチダウンとポンプオーバーを毎日繰り返し、香りと色味をよく抽出する。新樽5%、1年使用の古樽10%、残りはタンクで熟成。

若いうちは赤い果実のアロマが広がり、タンニンもストラクチュアもあるため、熟成にも向いている。
