発酵槽、プレス、選果台などを全てステンレス製。ミクロクリマ別に収穫・選果し、それぞれ別に仕込む。除伷の有無はその年のブドウの状態によって判断し、アルコール発酵後、新樽に移し10ヶ月熟成させ、その後地下のセラーでさらに樽熟。瓶詰め後、気温13度、湿度75％に保たれた最も地下深いセラーにて保管。
