Located in the commune of Rully in the Côte Chalonnaise region to the south of the Côte d'Or, Domaine Jaeger-Defaix is the family estate of Hélène Jaeger-Defaix, wife of Didier Defaix (of Chablis producer Domaine Bernard Defaix). Hélène’s great-grandfather Henri Niepce was instrumental in bringing about Rully's AOC status in the 1930s. In 2002, Hélène took over the family vineyards and she and Didier released their first wines in 2004.
Today, the domaine holds an impressive 6.5 hectares under vine in five crus, including 4.5 hectares in the the most prestigious premier crus of Rully. All the vineyards are farmed organically and harvested by hand. The wines - fresh, elegant chardonnays and subtle pinot noirs - are vinified at the Chablis home base. They all show remarkable precision, precise acidity, and superb aromatic purity - wonderful Burgundies at a fraction of the price of many other premier crus.
