バルバレスコにあるアジエンダ・アグリコラ・ソッティマーノは、1974年にリーノ・ソッティマーノ氏が、現在ソッティマーノ・ワイナリーとなっている農家と、ネッビオーロの産地として名高いコッタの土地を購入したことをきっかけに設立されました。

リーノ氏と妻のアンナ氏は、小さなブドウ畑から30年かけて、バルバレスコで最も評価の高いコッタ、パホレ、ファウゾーニ、クッラ、バサリンといったブドウ畑にネッビオーロの栽培を拡大しました。現在、ソッティマーノ氏は18ヘクタールのブドウ畑を所有しており、その多くは古木です。区画は有機栽培で、生物多様性を促進するカバークロップが植えられています。間引き栽培により、凝縮感のある果実が少量収穫されます。収穫時には、ブドウは手摘みで収穫されます。

ワイン造りはリーノ氏の息子、アンドレア氏が行っています。テロワールの純粋な表現を追求するため、彼は醸造への介入を極力抑え、自然な酵母発酵で醸造を行っています。発酵は自然酵母で行われ、ワインはフレンチオーク樽で24ヶ月（澱と合わせて最大12ヶ月）熟成されます。瓶詰めは無清澄、無濾過、無硫黄で行われます。

職人技、伝統的な製法、そして土地への深い敬意が込められた、刺激的な自然派ワインです。

Located in Barbaresco, Azienda Agricola Sottimano was founded in 1974 when Rino Sottimano purchased the farmhouse that is now home to the Sottimano winery, and some land in Cottá – a highly reputed area for the production of nebbiolo. 

From one small vineyard, over the next thirty years Rino and his wife, Anna, expanded the estate's Nebbiolo holdings in some of Barbaresco's most revered vineyards - Cottá, Pajore, Fausoni, Curra and Basarin. Today Sottimano owns 18 hectares of vineyards, a high percentage of which are old vines. The plots are farmed organically, with cover crops promoting bio-diversity. Bunch thinning sees low yields of highly concentrated fruit. At harvest, the grapes are picked by hand.

Rino’s son, Andrea, makes the wine. With a light hand, and the ultimate goal of producing pure expressions of terroir, he limits oenological intervention as much as possible. Fermentations take place naturally with ambient yeasts, and the wines are left to age in French oak barrels for 24 months (on the lees for up to 12 months). The wines are bottled unfined, unfiltered and with no sulfur.

These are exciting natural wines that reflect craftsmanship, traditional methods and an immense respect for the land.
