天然酵母により25%は全房発酵し、フレンチオーク(新樽20％)で10ヶ月熟成。75%は除伷し、7日の低温マセレーションにて色とアロマを抽出。その後１日1回の攪拌を5日ほど続け、1～4年物のミディアムトーストのフレンチオーク(新樽20%)で10ヶ月熟成。

アザミ、レッドカラント、高地のハーブやスパイスのアロマ。複雑なテクスチャーが流れるように広がり、エレガンスと深さのバランスが秀逸なワインです。
