2.95ha、樹齢30年、11,000本/ha、ギヨ・サンプル。100%除梗、4~5日の低温浸漬の後、32℃を超えない温度で約2週間発酵。パンチダウンとポンピングオーバーを併用し色付とアロマを抽出する。225Lの樽で15~18か月熟成。10%新樽で瓶詰め前に軽くろ過をする。年産約12,000本
