レ・シャン・ペルノに位置するシルト粘土質土壌。3年の若木より初収穫。ステンレスタンクにて天然酵母で発酵。フードル(70%)とステンレスタンク(30%)で10ヶ月熟成後、ステンレスタンクで2ヶ月熟成。清澄をせず、ろ過を行いビオディナミカレンダーの果実の日に瓶詰め。
