破砕、除伷後に小さな開口槽に入れ約2週間かけて天然酵母で発酵。その間ポンピングオーバーを毎日2回行う。圧搾後15ヶ月フランス産樽（約20％新樽）で熟成。1906年植樹のヘリテージ・クローン。古樹の低収量のジンファンデル。

レッドカラント、鮮やかなチェリー、ヤマヨモギのアロマから肉厚なトロピカルフルーツ、ココアパウダーがワインを引き立てます。フレッシュで鮮やかな酸が芳醇でまろやかなタンニンとバランスがとれ、キイチゴと熟した赤と黒の果実の風味が幾層にもなり芳ばしいスパイスと共に広がります。
