1ha、灰色のマール土壌、平均樹齢30～50年。手作業で除伷、破砕せず粒のままタンクに入れ、亜硫酸の代わりに二酸化炭素を充填。天然酵母によるアルコール発酵・マロラクティック発酵、ヴィンテージによりタンクまたは大樽で６～９ヶ月熟成。畑の中に小屋（Cabane）がある事から命名。ABマーク、デメテール取得。
