オーガニック栽培の畑であるYungarra【ユンガラ】の丘上に植えられたブドウを早朝に手摘みで収穫。全房プレス。発酵にはイタリア製アンフォラとフレンチオークの新樽、そして古樽を使用しています。手作業でバトナージュしながら澱の旨味をたっぷりと溶け込ませつつも、過度な還元を避けたそうです。

印象はまるでダイキリ。塩味があり、フレッシュスクイーズしたライムとレモンの果実味。さらに洋梨とリンゴの個性にカリンの爽やかさ。丸い食感も加わってレモンカードの味わいも楽しめます。舌を引き締めるタイトでストイックなストラクチャーも素晴らしいワインです。
