Basket Range【バスケット レンジ】の自宅裏庭に広がる自社畑のスロープから生まれる単一畑Pinot Noir。過去には高い揮発酸やマメにも悩まされたキューヴですが、2022年はSO2を10-20ppm使用。クリーンかつチャーミングな、薄い色調の優しいスタイルに仕上がっています。特に選果工程を厳しく管理し、発酵/熟成槽も過去とは全く異なるアプローチを取っています。ユーカリの中でも目が詰まった維管束が特徴のJarrah【ジャラ】を4000Lの大樽に加工。2年にわたり水を入れては捨て、樹液の影響を極力抑えてからローストし、その大樽で発酵。オープントップにして、一部を全房で仕立てています。また熟成は酸素を遮断できるステンレスタンクで10カ月。MLF終了後にバクテリアの活性を抑え、一種の還元状態としています。ちなみにこれはChablisの優良生産者等も採用している方法で、澱の過剰な作用を抑えるために有効と言われています。
≪詳細/Details≫
色調はとても薄く、淡いルビー。イチゴとチェリー、クローヴにリコリス、紅茶のニュアンス。出汁感があり、とにかくジェントル。美味です。
