The creation of Domaine Heresztyn-Mazzini marked the beginning of an exciting new project for husband-and-wife owners Florence and Simon Heresztyn-Mazzini. In 2012, after ten years spent working on Florence’s family’s vineyard in Gevrey-Chambertin, the couple started their own venture with an estate that currently covers 5.5 hectares, spread over the villages of Gevrey-Chambertin, Morey-Saint-Denis, and Chambolle-Musigny. They have adopted organic and biodynamic practices across all of their vineyards.
Every action the couple takes is deliberate and thoroughly researched, from the vine to the cellar, with respect for the region's soils and natural environment guiding all of their choices. They produce wines with a significant percentage of whole cluster fermentation to give structure - just how much depends on the specific vintage conditions. The wines spend three months in vat and are then matured for 12 to 16 months in barrels procured from carefully selected coopers. Bottling is done on the estate, taking the lunar calendar into account so as to avoid rushing the wines and to guarantee continued high quality. The result is refined and expressive, age-worthy wines with great richness and depth.
