AOCのエトワール（星）は小さな星の形をしたウミユリの化石が多く見られたことに由来します。畑が東向きのためauLevant（日の出る方向）と命名。オレンジなどの鮮やかな柑橘の酸味と力強いミネラル、繊細で長い余韻には塩味が感じられます。貝や甲殻類とのペアリングをお勧めします。
