0.39ha、樹齢50年、植密度11,000本/ha、ギヨ・サンプル、年産約2,200本。収穫は手摘みで100%除梗。4~5日の低温浸漬の後に32℃を上回らないように発酵を進める。パンチダウンとポンピングオーバーを併用し、色と香りをよく抽出する。熟成はオーク樽で15~20か月、新樽比率は28%。
≪詳細/Details≫
深い色合いに、赤く熟した果実、樹脂やリコリスなど複雑な印象。味わいはきめ細かいタンニンに裏打ちされストラクチュアのハッキリとしたフルボディ。
