一部の品種はブドウの粒のまま80℃まで加熱後、20℃まで冷却。マロラクティック発酵後、ブレンド作業を行い１年間大きなオーク樽の中で熟成、卵白での清澄後、瓶詰め。更に最低1年間セラーで瓶熟されリリース。

幅の広い複雑なアロマで、赤いベリー系の果物、なめし皮、トリュフやジャコウの香りを含みます。コショウ、甘草等の香辛料のシャープな雰囲気も感じられます。
