オーガニックとバイオダイナミックの認定を受けた畑のぶどうを使用。7日の低温マセレーションを経て天然酵母が活動を開始。最高約12日毎日丁寧に攪拌。フレンチオーク(新樽28％)で12ヶ月の熟成期間中に自然にマロラクティック発酵が発生。

ハーブや土っぽさ、シナモンスティックの香りに、スミレや赤いバラ、ブラック・チェリーのアロマ。生き生きとした酸とヴェルベットの様な熟成したタンニンにしっかり構成され凝縮した味わいが折り重なり、フィニッシュが長く続きます。
