シャブリに位置するドメーヌ・ベルナール・ドゥフェは、1959年に設立された4代目ワイナリーです。創業当初は2ヘクタールでしたが、現在ではブルゴーニュ地方シャブリ地方全域に27ヘクタールものブドウ畑を所有しています。その中には、3つの素晴らしいプルミエ・クリュ（コート・ド・レシェ、ヴァイヨン、リス）に加え、シャブリおよびプティ・シャブリのアペラシオンにもブドウ畑があります。すべての畑で持続可能な有機栽培（2009年にエコサート認証）とビオディナミ農法が採用されています。

2012年から、ドメーヌは純粋で精密なオーガニックワイン（認証取得）を生産しています。常に、それぞれのブドウ畑の個性を最大限に引き出すことを目標としています。発酵はキュヴェに応じてステンレスタンクまたはオーク樽で、天然酵母を用いて行われます。ワインは8ヶ月から12ヶ月間澱と接触させて熟成されます。瓶詰め前に清澄処理を行い、軽く濾過します。

これらは、特徴のある、古典的なスタイルのシャブリです。濃厚で明るく、生き生きとしており、豊かなミネラル感と優れた熟成能力を備えています。

Located in Chablis, Domaine Bernard Defaix is a fourth-generation estate, founded in 1959. From an initial two hectares, today the family’s vineyard holdings total 27 hectares across the Chablis region of Burgundy, including three impressive Premier Cru vineyards (Côte de Léchet, Vaillons and Lys) and others in the Chablis and Petit Chablis appellations. All are farmed sustainably and organically (Ecocert certified in 2009) and biodynamics practices are employed.

From 2012, the domaine has produced pure and precise organic wines (certified). The goal is always to showcase the specific characteristics of each individual vineyard. Fermentations take place with native yeasts in stainless steel tanks or oak barrels, depending on the cuvée. The wines stay on lees from eight to twelve months. They are fined for clarity and lightly filtered before bottling.

These are characterful, classically styled Chablis – intense, bright and lively with hefty minerality and excellent aging potential.
