醸造:残糖約58g/ℓ。機械と手で収穫し除梗。空気圧プレスゆっくり圧搾し24時間低温で清澄。2000ℓの小さなステンレスタンクを使い18~20℃で2ヶ月発酵後、翌年5月に瓶詰め。非常に長命なワインで甘草、ハチミツ、トリュフなどの複雑 な香りが魅力的です。デザート、魚、フルムダンベールのよう なブルーチーズと良く合います。
