‘Between Five Bells’ are the last three words in the first stanza of Kenneth Slessor’s famous poem, Five Bells. Conceived by David Fesq, the 6th generation of a wine merchant family with its roots in Bordeaux, the Between Five Bells project is a collaboration between David, iconic Lethbridge Wines winemaker, Ray Nadeson, and top Sydney sommelier Josh Dunne. The low-intervention wines are made in small quantities by Ray at the Lethbridge winery in Geelong, Victoria. The driving ideology is neither of place nor varietal. Instead, the wines are multi-regional, multi-varietal blends of Australian origin, with Californian field blends and Southern Rhône wines as particular inspirations. Forgoing the idea of terroir gives Ray greater freedom with his winemaking, allowing him to experiment with texture, fermentation vessels and blending. The resulting wines are are unconventional and delicious. The range includes a Red, White. Amber, Pinots, Pet Nat and every now and then the ‘Yellow’ and the ‘500’.
