コート・ド・ニュイのモレ・サン・ドニに位置するドメーヌ・トプノ・メルムは古くからワインを造り続ける家系で、今では7代目の親族であるロマン・トプノとヴァルジニ・トプノにより経営されています。コート・ド・ニュイに9ha、コート・ド・ボーヌに5ha畑を所有し、これらの贅沢ともいえる彼らの畑は、1963年のドゥニーズ・メルムとジャン・トプノの結婚にまで遡ります。サン・ロマンのトプノ家が所有するコート・ド・ボーヌの畑と、モレ・サン・ドニのメルム家がニュイに持つ畑が統合され、現在のドメーヌの基礎となりました。ドメーヌが所有する多くの畑は、一級畑もしくは特級畑で、一級畑も人々に羨望の眼差しを向けられるほど素晴らしいものが揃っています。畑を構成するブドウ樹齢は平均して40年を超えていますが、中には70年を超える高樹齢のものもあります。
2001年よりオーガニック栽培を始め、若いトプノは時にドメーヌのスタイルに変化をもたらしました。現在ドメーヌは17のアペラシオンから19のワインを生産しており、ピュアで明快なアペラシオンの表現を重視しています。ロマンは自身のことを冗談めいて「Lazy winemaker」(怠惰なワインメーカー)と言っています。というのも、セラーにおける人的介入を最小限にとどめるために、畑でのブドウ栽培の世話に注力しているためです。ブドウは手摘みで収穫され、低温浸漬を経て、野生酵母により発酵されます。これらは偉大なヴィニュロン、アンリ・ジャイエの教えです。培養酵母や酵素、その他添加物の使用は全くの論外。新樽の使用にも慎重です。少しの例外を除きワインは無濾過で瓶詰めされ、亜硫酸塩の使用も最小限に止めています。
ワインは常にフレッシュで焦点が合っており、優雅でエレガンスに溢れています。
Located in Morey Saint Denis, in the heart of the prestigious Côte de Nuits, Domaine TAUPENOT-MERME is an old family estate, today managed by the 7th generation in siblings Romain and Virginie Taupenot. They cultivate nine hectares in the Côte de Nuits and another five in the Côte de Beaune. This impressive array of holdings traces back to the marriage of their parents, Denise Merme and Jean Taupenot, in 1963 - a union which brought together vineyards from the Taupenot family, based in Saint-Romain, with those belonging to the Mermes, from Morey-Saint-Denis. A significant portion of the domaine’s present-day holdings are in premier cru and grand cru appellations, and all of the premiers crus are enviably placed. The vineyards are composed of some very old vines (70+) with the average age exceeding 40 years.
Having farmed organically since 2001, the younger Taupenots have been fine-tuning the house style for some time. They produce nineteen exceptional wines across seventeen appellations, with a focus on purity and clear vineyard expression. Romain jokingly refers to himself as a “lazy winemaker,” prioritising work in the vineyard in order to minimise the need for intervention in the cellar. The grapes are hand-harvested and undergo a cold soak before fermentation with wild yeast, a method pioneered by the late, great Henri Jayer. Cellar operations are gentle and performed with the goal of expressing the nuances of each specific vineyard site. Accordingly, commercial yeasts, enzymes and other additives are out of the question, and new oak is used judiciously. With few exceptions, the wines are bottled unfiltered, with sulfur kept to a minimum.
Consistently fresh and tensile, these are focused wines of immense grace and elegance.
